I've been eating trash for the past week. That's what 20 inches of snow in April will do to you, I guess. The sun came out today and although we're supposed to get a few more inches of snow tonight, I felt like making something bright and fresh as a reminder that spring will come one day. Maybe.
Sweet Potato Hash
- 1 tbsp olive oil
- 2 small sweet potatoes, cubed
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 1/2 tbsp paprika
- 1 tsp cumin
- 1 can black beans, drained and rinsed
- 2 cups spinach
- fried eggs
- avocado slices
- hot sauce
Heat oil in a large skillet. Add potatoes, onion, red bell pepper, paprika, cumin, salt and pepper. Cook for about 10 minutes or until potatoes are softened.
Add spinach to skillet and cook until wilted, about 5 minutes. Add black beans and stir to combine. When warmed through, serve with a fried egg and avocado slices. Top with hot sauce, if you're feeling fiesty.
